Every loaf begins with a slow, cold fermentation process that develops complex flavors, superior digestibility, and an open, airy crumb structure.
We use only premium, high-quality unbleached wheat flour — carefully selected for its superior protein content and flavor, delivering a depth and texture you simply cannot find in commercial bread.
No machines, no shortcuts. Each loaf and bagel is hand-shaped by Reina herself, honoring traditional European artisan techniques passed down through generations.

You'll get an email confirmation with your order summary, pickup address, and all the details you need. We'll also send a reminder the morning of your pickup day.
Pick up your fresh bakes at 464 S Kirkman Rd, Orlando, FL 32811. Look for the Alina’s Micro Bakery signage. Your order is baked fresh that morning and ready between 8:00 AM – 2:00 PM. Everything is pre-paid — just grab and go.

Absolutely! We love custom orders for events, corporate gifting, and special occasions. Reach out via our Contact form at least one week in advance with your request — quantities, flavors, and any special requirements. We'll do our best to accommodate you.
You can modify or cancel your order up until Thursday at midnight by emailing us at orders@alinasmicrobakery.com. After the deadline, we've already begun prepping your bake, so changes may not be possible. We appreciate your understanding!
We hold all orders until 2:00 PM on your chosen pickup day. If you're running late, please email or DM us on Instagram so we can try to accommodate you. Unfortunately, unclaimed orders after 2:00 PM cannot be refunded, as all items are baked fresh and perishable.

Yes! We offer delivery within a strict 15-mile radius of our Kirkman Road location (464 S Kirkman Rd, Orlando, FL 32811). A $25 minimum order is required for delivery. The flat delivery fee is $7, and orders over $50 automatically qualify for free delivery — just enter promo code FREESHIP at checkout (must be within the 15-mile radius). If you're outside the delivery zone, you're always welcome to place a pickup order on weekends!
To ensure peak freshness, all deliveries are batched and routed together. Deliveries go out every Saturday between 2:00 PM and 4:00 PM. Please make sure someone is available to receive your order during that window — we cannot leave perishable items unattended.
Yes — all of our sourdough loaves and bagels are made with wheat flour and contain gluten. Our kitchen is not gluten-free and we cannot guarantee the absence of cross-contamination. We do not currently offer gluten-free options.
Our products may contain or come into contact with: wheat/gluten, dairy (butter, cheese in jalapeño cheddar bagels), eggs, and sesame seeds. The cinnamon chip bagels contain cinnamon and sugar. If you have a severe allergy, please contact us before ordering so we can advise you properly.
We use high-quality, unbleached wheat flour, filtered water, sea salt, and our own live sourdough starter — that's it for the base loaves. Specialty bagels use additional premium ingredients like aged cheddar, fresh jalapeños, fresh rosemary, and real cinnamon chips. No preservatives, no additives, ever.
Sourdough loaves are best enjoyed within 3–4 days at room temperature, or slice and freeze for up to 3 months. Bagels are best the day of pickup but stay great for 2 days. To refresh, pop them in a 375°F oven for 5–8 minutes — they'll taste just-baked again.
